Aunt Betty’s malva pudding

Instructions

  1. Preheat the oven to 180°C and grease an ovenproof dish (about 23x23cm).
  2. Cream the sugar and butter in a large bowl, then beat in the egg.
  3. In a separate bowl, sift together the flour, bicarbonate of soda and salt. Take turns adding the milk and dry ingredients to the creamed mixture.
  4. Add the vinegar and apricot jam and mix well.
  5. Pour the mixture into the prepared dish and bake for 40-45 minutes. It should have a golden crust when done.
  6. Sauce In a saucepan, bring the milk, sugar and butter to the boil, stirring continuously.
  7. Boil for about 5 minutes, then remove from the heat. Add the vanilla extract.
  8. Pour the sauce over the pudding as it comes out of the oven. Allow to stand to absorb the syrup.
  9. Serve hot with the cream or custard.
